What to do with summer veggies - Tomatoes - Foodie Friday

In last week's post, I talked about all the yummy things you could make with your bounty of fresh green beans. This week, we're going to focus on tomatoes.

Fresh from the garden summer tomatoes are quite possibly one of my favorite foods ever. There's quite a difference between the hard, flavorless tomatoes you get from the grocery store in December and the soft, ripe, bursting with flavor tomatoes you get from your garden in August. A HUGE difference in fact. My favorite way to eat said summer tomatoes is with a little salt or maybe on toast with some mayo. When you're starting to tire of eating them like that, here are some other great alternatives.

Tomato stuffed with Parmesan


Summer spaghetti

All of these recipes look delicious and I can't wait to try a few once our tomatoes ripen up. What is your favorite tomato recipe?
