What to do with summer veggies - Green Beans - Foodie Friday

It's August and that means that if you've got a summer garden or frequent a local farmer's market you're probably noticing there's an abundance of wonderful vegetables just staring you in the face. I LOVE fresh summer veggies. There are some veggies that just taste better when they're home grown, or grown locally, and picked at the peak of ripeness in the summer.

One of these being green beans. Am I the only one who notices that all the green beans seem to be ripe at the same time, leaving barely any room in the fridge for anything else? Don't get me wrong, I love green beans just about any way you can make them - except for completely over cooked and mushy.

So the question quickly becomes: What do I DO with all of these wonderful green beans?

If you've got an abundance of green beans, these look like a few great options:

Bacon wrapped green beans - I may have also seen these prepared on a grill...

Green beans, summer squash and tomato saute

Roasted green beans with mushrooms

Balsamic green bean salad
