Cake Mix Cookies - Foodie Friday

Today's Foodie Friday is brought to you by the letter C and the number 7.

Why the letter C?

Because today we're making Cake Mix Cookies and they have coconut in them...well and cake mix too.

Why the number 7?

Because I just picked a random number. No real reason!


And now for the recipe. This is the recipe my mom had and I now use. It's tasty.


Ingredients:
1 package yellow or white cake mix (I think you could use any flavor you wanted really)
1/3 cup milk
1/4 cup softened butter or margarine
1 egg
1 cup chocolate chips (or I substituted sprinkles)
1/2 cup flake coconut (the dried stuff)

Directions:
  1. Combine cake mix, butter, milk and egg. Beat on low speed until very stiff dough forms.
  2. Mix in chips and coconut.
  3. Drop by rounded teaspoonfuls, 2 inches apart, onto lightly greased cookie sheets.
  4. Bake at 375*F for 10-13 minutes or until lightly browned.
  5. Let stand a few minutes before removing from sheet.
This recipe is so very simple and easy to make. It doesn't take much to make delicious cookies.

In case you've never had cake mix cookies, they taste somewhat like raw cake mix. Personally, I LOVE this taste and have no qualms about eating cake batter straight from the mixing bowl. For those who are concerned about things like salmonella and other nasty things you might encounter when eating raw batters and doughs, this recipe makes it safe and easy to find a similar flavor.
