Manic Monday + Recipe Bonus!

This weekend was a TON of fun!

Since my sister's birthday was last Wednesday and my husband's birthday is this Thursday, my aunt decided to have a BBQ at her house to celebrate. It rained a bit and was kind of hot and icky, but it was such a great time. We had entirely too much food too! Of course we had hamburgers and hot dogs, plus pinwheel sandwiches. They were so fun to make!




Ingredients (makes 32 1in. pinwheel sandwiches):

  • 2 packages softened cream cheese (I probably could have used just 1 package as I had leftovers)
  • 6 green onions, cut finely into small pieces (Again, could have just used 3)
  • 8 taco size flour tortillas
  • 8 (approx.) slices your choice of lunch meat (I used ham and turkey)
  • 16 (approx) slices your choice of cheese (I used pepper jack and a 3 cheese blend)
  • Toppings of your choice (I used cucumber and lettuce)

Directions:
  1. Mix chopped green onions into softened cream cheese until blended. It should be easily spreadable.
  2. Prepare chosen toppings so they are small enough to fit in rolled up tortilla.
  3. Spread desired amount of cream cheese mixture onto 1 tortilla - not too much and not too little. Make sure to go all the way to the edge as this will be the glue that helps it stick together once rolled up.
  4. Top with 1 or 2 slices of lunch meat depending on how thick it is and layer 1 or 2 slices of cheese, depending on how big the slices are, on top of the meat to cover the width of the tortilla. Make sure to place the meat and cheese close to the edge of the tortilla you will start rolling.
  5. Add other toppings on top of the cheese layer. Be sure not to over fill as this will make it more difficult to roll.
  6. Begin rolling from one end of the tortilla. Try to get the opposite end to have a bit of the cream cheese mixture to show because this will act as a glue and hold the roll together.
  7. Once rolled up, trim the ends to be straight. Eat the scraps, they're yummy!
  8. Cut the tortilla into quarters, about an inch thick.
  9. Skewer with a toothpick to be sure they don't fall apart.
  10. Repeat steps for remaining tortillas.
  11. Enjoy!
